전복(全鰒)은 전복과에 속하는 조개로 옛부터 조개류의 황제로 군림했으며 때로는 신비의 대상으로 선망의 제품으로 옛 문헌상에도 자주 등장한다.전복은 영양면에서나 맛에서도 다른 해산물과는 질적인 차이를 보이고 있다. 이러한 이유로 궁중 요리에서도 전복을 빼고는 설명할 수가 없을정도이다.

전복은 수심 4-20m까지 종에 따라 널리 분포하고 있으며 우리나라에는 5종이 서식 하고 있다.현재의 자연산은 대부분 참전복이고 제주 지방의 큰 전복인 말전복, 까막전복 오분자기 등 전복이 서식하고 있다. 통영의 참전복은 아주 깨끗한 바다가 아니면 살지 않기 때문에 그 양이 한정되어 있고 많지 않다. 전복은 전부가 복덩이이다.

한편 참전복의 영양은 어떤 조개들보다 우수한데 육질 100g당 단백질 16.5 (참굴10.5g)으로 많은반면 지방은 0.7g(참굴2.4g)으로 매우 낮다. 무기질인 칼슘은 49mg (참굴 84mg) 철분은 2.4mg(참굴3.8mg)으로 낮은 반면 로이신 66mg(참굴669mg) 과 함유 아미노산은 525mg(참굴 370mg) 타우린은 1799mg(참굴1006mg)으로 매우 높다.
